Eggplant Caviar
EGGPLANT CAVIAR
1 Eggplant, halved and roasted
1 Teaspoon Olive Oil
1 Head Garlic, roasted
Juice of 1/2 Lemon
1 Tablespoon Parsley, finely chopped
1/2 teaspoon Salt, or to taste
Black Pepper to taste
